Our May 2020 Challenge is a follow up to our 25-Day Let’s Try Vegan Challenge – the 2.0 version takes place May 1-31 and its a Plant-Based, Meatless Eating Challenge coupled with a workout plan.
So, why go meatless, what does that even mean?
Some of you may already know that I follow a pescetarian diet, and a few times out of the year I take out all animal products, dairy and eggs included. What’s the big deal about taking out a few extra food options? For me, I find that following a whole foods plant-based diet makes me a little more conscious about the things I’m allowing to enter my body. I eat relatively clean for the most part, but as someone who studies nutrition and helps others make better food choices, I myself have to become a more mindful eater.
In taking this challenge with me, I hope the same will be true for you, that you’ll read ingredient labels, ask questions when dining out, know where your food comes from and rather than selecting the easy option opting to make the healthy selection.

There are levels to this!
LEVEL 1: Go Meatless Every Monday. No fish, chicken, beef, pork, etc.
Tues – Sun: Make at least one meal each day All Plant-Based – Breakfast, Lunch, or Dinner.
LEVEL 2: Go Meatless with the exception of fish/seafood.
LEVEL 3: All in “the full monty”
