This basil pesto salmon is perfect for anyone who wants to eat well but doesn’t want to spend countless hours in the kitchen to do so. It literally takes less than 30 minutes from start to finish and that includes preparation and bam a gourmet dinner with zero fuss. Not to mention, it’s healthy (just take out the butter? ). Pair it with rice, pasta, or potatoes and some healthy greens and you have a complete meal. If you want to be fancy, garnish with parsley and sliced lemon and serve it to guests and let them fawn over your cooking prowess. This is the kind of dish that will look like it took a bit of elbow grease but won’t keep you in the kitchen for more than a few minutes.
Basil Pesto Wild Atlantic Keto Salmon
- 21 oz Wild Alaskan Keta Salmon
- 2 TBS Olive Oil
- 1 TBS Black Pepper
- 1 TBS Goya All Purpose Seasoning
- 1/4 TBS Garlic Seasoning
- 2 TBS Basil Pesto (used Rana currently #BOGO at Publix)
- 1/2 cup of water of seafood broth
- 1/2 TBS of Butter (used Vegan butter)
- 1 Lemon
Pre-heat oven to 350
Wash Salmon + Pat Dry
Cut into 3 – 7 oz fillets then place in a bowl.
Rub 1 TBS of Olive Oil onto fillets
Rub in spice mix & juice of 1/2 a lemon
Let sit for a few minutes but not too long since the lemon will cook the salmon ??♀️.
In the meantime grab your cast iron skillet…if you’re fancy. Add 1 TBS of Olive Oil. Once it’s hot and water sizzles on the surface add your Salmon. Reduce heat and let cook for 1-2 minutes only to give it color (I’m Haitian, so this concept will be repeated a lot).
There should be some “marinade/rub” left in your seasoning bowl. Add your water or broth to this bowl and squeeze in the juice from the other half of your lemon.
By now your salmon should be ready to flip. Add your 1/2 TBS of butter then add your “marinade water”. With a spoon ladle some onto the fish so it doesn’t dry out.
Now, with a basting brush or a spoon??♀️, spread the Pesto onto the fish. Remove from the stove and place into your warm and toasty oven. Turn the heat up to broil …should be less than 5 minutes for singe your Pesto. Et voila! 3 servings of Basil Pesto.
