Vegan Eggnog French Toast

Tis the season! So, we’re whippin’ up Eggnog French toast for breakfast. The name sounds fancy yet this twist on a breakfast regular is très simple to make and the results are a deliciously festive way to spice up your morning.

You can use any brand of nog, however, for this recipe, we’re using So Delicious brand and keeping it vegan by using ground flaxseed instead of eggs. (Note: To get a pretty picture I plated the toast with whipped cream, however, you can use a coconut cream to keep it vegan).

Caramelized bananas and granola are my favorite breakfast toppings at the moment so I went with that, but fresh berry would do the trick as well!

 

Vegan Eggnog French Toast

What You’ll Need:

  • 1 cup vegan eggnog
  • 1 tbsp ground flaxseed or chia seeds
  • 1 tsp cinnamon
  • .25 tsp nutmeg
  • 1 tsp vanilla extract
  • 3 tbsp flour
  • 4 thick slices of bread
  • 1 tbsp vegan butter

How to Prepare:

  1. Mix together eggnog, flaxseed, spices, vanilla, and flour. Set mixture aside in the fridge for 10 minutes. Give it another stir after removing it from the fridge.
  2. Melt a tablespoon of butter over medium heat.
  3. Dip your bread into batter and placed coated bread in skillet to fry for 2-4 minutes per side.

The French Toast keeps well, so you could freeze leftovers and reheat in the toaster oven to enjoy on the go!
